Composting Domestic Waste?

I collected kitchen waste ( tea making waste, fruit and vegitable wastes etc) in an open 20 lit plastic bin at a corner in the terrace till the bin was full . In about 3 months the material got converted to soil like manure. However there was a problem of stench and flies . What will happen if we leave wet kitchen waste in a closed (in order to avoid stench) plastic container for as long as required . Will it get digested in may be an year?
